Quilon, has retained its Michelin star for the fifth year in the 2012 Michelin Guide to Great Britain and Ireland, published 6th October 2011.
Speaking directly from the kitchen, Executive Chef Sriram Aylur comments; ‘myself and the team are truly delighted. A Michelin star is the ultimate recognition and to retain our star for a fifth year reflects all of our hard work. This pays tribute to the team who have worked incredibly hard to maintain exceptional standards at every service.’
First awarded a Michelin star in the 2008 guide, Quilon (owned by the Taj Group) became the first restaurant serving south-west Indian cuisine to be bestowed with the accolade, and remains the only Michelin starred south Indian restaurant in the world.
Renowned for his unchallenged knowledge of spices, stunning desserts and beautiful fish dishes – including subtly spiced, baked black cod – Sriram is dedicated to progressive cooking and exploring every possibility to further Indian cuisine.
He comments; ‘I use traditional methods as well as modern techniques, combing ethnic cooking with contemporary taste.’
